Bill’s Orange and Cardamom Biscuits

‘Delicious biscuits with a hint of exotic India’!

Equipment:
  • Grater
  • Lemon juicer
  • Sieve
  • Measures – cup, tablespoon, teaspoon
  • Bowls – 1 large, 1 med, 1 small
  • Scales
  • Handheld mixer (with 2 beaters)
  • Large metal spoon
  • Fork
  • Rolling pin
  • Baking trays
  • Baking paper
Ingredients:
  • 3 cups plain flour, plus extra
  • 2 teaspoons baking powder
  • 1 tablespoon ground ginger
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cardamom
  • 250g unsalted butter, softened
  • 1½ cups brown sugar
  • 1 orange
  • 1 egg
  • 1/4 cup granulated sugar
What to do:
  • Preheat the oven to 180°C.
  • Finely zest the orange, then cut in half and juice.
  • Sift the flour, baking powder, ginger, nutmeg and cardamom into a large bowl.
  • Place the butter and brown sugar in a medium bowl and beat until pale and creamy.
  • Add 3 teaspoons of the orange juice and the zest and mix well.
  • Using the large metal spoon, fold the dry ingredients through in two batches.
  • Sift the extra flour over a clean dry surface and knead the dough for 30 seconds.
  • Roll the dough into a large rectangle 5mm thick. Cut into shapes 3cm x 6cm long.
  • Crack the egg and separate, placing the white into the small bowl (reserving the yolk for another time). Lightly whip the egg white with the fork, brush onto biscuits and sprinkle with sugar.
  • Place the biscuits 2cm apart on a baking tray lined with baking paper. Bake for 10 to 12 minutes, or until lightly browned.
  • Remove from the oven and leave to cool on a wire rack.
Notes:

Why do we use the large metal spoon in this recipe? Why do we first sift the flour and the spices? What does the ‘hint of exotic India’ Bill mentions refer to?
